Kale is an extremely healthful leafy green and a more sophisticated cousin to spinach. However, I find kale to be a little bitter for my taste. I just read about "dinosaur" kale, a variety of kale that is sweeter and nuttier than regular kale, nicknamed "dinosaur" for the texture of the leaves. It's also known as Lacinato kale.

I often steam some kind of greens for dinner and mix it up with a few things. I steamed the dinosaur kale then mixed in toasted sunflower seeds and a little olive oil.

I LOVED the kale! If you've tried regular kale and didn't like it, I highly suggest giving dinosaur kale a try. You can mix in any types of nuts or seeds, but I thought the sunflower seeds were especially good.

Kale is a great source of vitamin K, vitamin A, vitamin C, maganese, dietary fiber, calcium, vitamin B6, potassium, iron, magnesium (and many others!) Eating dark leafy greens is one of the best things you can do for your health. They hold so many nutrients, are low in calories, and can really serve as a whole meal in a situation like this.
