This may seem like an odd combination, but it is my new breakfast favorite.
It's a piece of toasted Ezekiel Sprouted Sesame Bread (read about sprouted bread in the All About Bread post). Then I add a bit of organic coconut oil which adds a sweet, buttery flavor.
The mashed yams I made for Thanksgiving dinner serve a thousand purposes. I like them so much that I make a batch at the beginning of the week and then keep them in the fridge for later. They're great cold and in cases like this, make a great topping for bread. Finally, I add sliced avocado and sprinkle cinnamon on top.
It's really an unbelievable combination of flavors! The nutty bread, buttery coconut oil, sweet yams, and creamy avocado. It's a great source of fiber, complex carbs, and healthy fats.
Enjoy your food,
Emily

That looks fabulous!
1I bought and tried Stevia and I think it is awful
you must use very little.. I have a few
questions.. Do you drink? And do you ever eat sugar? Also, I know you are in college, are you majoring in Nutrition?
2Stevia is EXTREMELY sweet and you only need a very small amount to make something sweet. I use about two drops in a big cup of tea. I would imagine if you were to use a mass quantity that it could be really intense and probably not taste very good.
I drink very rarely. When I do drink, I only drink vodka because it has the least effect on blood sugar and sugar response in the body (as opposed to wine, beer, wine coolers, mixed drinks, etc). It's impossible to consume no sugar (even vegetables have some sugars) but I generally only consume foods with less than 5g of sugar per serving. I never have high fructose corn syrup or artificial sweeteners.
I'm actually a classical musician. I play the cello and I'm majoring in cello performance. Nutrition is just a side interest of mine.
