While most people were out either trick-or-treating or swiping some of their kid's candy, I decided to take the opposite route and make myself an impromptu healthy dinner.
What you see is:
- roasted vegetables
- mashed yams
- steamed asparagus and zucchini
- quinoa
As some of you may know, I am no chef, so all of this delicious food was really easy to make.
Roasted Vegetables
Zucchini, carrots, potatoes, onions, and sweet potatoes with olive oil, rosemary, thyme, sea salt and pepper, baked for about 20 minutes.
Mashed Yams
These were a real treat. I steamed the yams, then mashed them, adding just a drizzle of olive oil. Then I added a bit of sage, cinnamon, and sea salt. They were incredibly sweet and delicious... it almost could have served as dessert!
Steamed Asparagus and Zucchini
Steamed the vegetables for about 10 minutes, then covered in toasted sesame oil.
Quinoa
Quinoa (pronounced keen-wa) is a lightly and fluffy grain that only takes about 15 minutes to cook and is far higher in protein than most other grains.

2Looks delicious!! I just was wondering what you thought of portion control? Do you eat all of the vegetables in the pictures? Or is that for a few people? Thanks
3All of the food shown was for three people. I ate slightly more than what's pictured on the plate in the first picture (especially of the sweet potatoes!) I don't think portion control is nearly as important when you're consuming mostly vegetables; I just try to pay attention to my body and stop when I'm full.
4even though I just stumbled upon this and its long after halloween, just wanted to say it looks great!!!
