I always like to have good tortillas on hand; with them I can turn virtually any combination of ingredients into a fun and easy meal.
Today I combined steamed zucchini, avocado, cherry tomatoes, hummus, and cilantro in side of an Ezekiel Sprouted Grain tortilla. I pictured it open-faced as well so you can get an idea of what was inside.
Completely delicious and very satisfying. The most important ingredient to talk about here is the Ezekiel tortillas. You may remember me mentioning Ezekiel bread in my "All About Bread" post. Well, this great company also makes tortillas which are high in fiber and protein. Just like the bread, they are completely flourless and contain only sprouted grains, water, and sea salt. Sprouted grain bread is significantly better for you than traditional flour-based breads because they contain no yeast, added sugars or sweeteners, and are rich with enzymes, vitamins, and nutrients that are activated when the grains are sprouted.
So, get some of these great tortillas and see what fun combinations you can come up with!

Looks great! I don't particularly like cherry tomatoes, but I'm sure I could find something else in the kitchen.
1Looks awesome. I was wondering if you had a fave brand of hummus or if you prefer to make your own?
2Ohh, I'm not very ambitious when it comes to making stuff like hummus (or guacamole, or other dips). I usually just search out to find the best store-bought kind. I love almost all hummus, but I think my favorite brand is Tribe. It's easy to find in chain grocery stores, comes in lots of great flavors, and has no preservatives.
3I had the exact same meal yesterday, but with eggplant and minus the tomatoes. Strange..
4I agree, all we buy is TRIBE as well, we get 2 huge tubs at Costco for only 6.99! Just have to be careful....there's "natural" TRIBE and the regular stuff.....which has Canola Oil in it. Maybe it's just me, but I don't trust Canola. No such plant or vegetable or grain called Canola..... name is from Canada + Oil = Canola. Actually is extracted from Rapeseed. Don't trust something that needs to be re-named to sell. Just my opinion.
